This selection brings together three wines made using the ancestral method, where fermentation in the bottle occurs spontaneously, without the addition of sugars, commercial yeasts, or other additives. The result: fine, natural bubbles that provide texture, lightness, and a refreshing sensation on the palate.
This selection includes:
- 2 bottles of Campestral Palo Mino Ancestral 2021 : A dry and vibrant sparkling wine with citrus and saline notes and a refreshing finish. Ideal with fish, salads, or soft cheeses.
- 2 bottles of Campestral Clarete Ancestral 2021 : A fusion between white and red wine, with a light body, floral notes, and subtle bubbles. Very food-friendly, ideal with spicy dishes or fusion cuisine.
- 2 bottles of Campestral Contintilla Ancestral 2021 : The wine presents lively bubbles and an intense garnet color, with good tears in the glass; on the nose it is clean and intense, highlighting notes of gummy candy, candied fruit and touches of pastry.
All the wines in this pack are organic and minimally interventionist . This means they are not only more respectful of the land, but also more expressive: each bottle directly reflects the character of the grape, the climate, and the unique albariza soil of the Sierra de Cádiz.

Notas de cata
Ancestral Palo Mino:
Pale lime green with golden highlights, its nose unfolds delicate aromas of ripe fruit, subtle hints of spice, and a floral touch of orange blossom. On the palate, its soft, natural bubbles highlight a refreshing acidity and a clean finish with light bitter notes that invite another sip.
Ancestral Clarete:
It has lively bubbles and a salmon-orange color, similar to wines made using the saignée method. On the nose, it is clean, with prominent aromas of apricot, hazelnut, spices, and orange blossom. On the palate, it has medium acidity, is balanced, with notes of fresh fruit and a touch of sweetness on the finish.
Ancestral Tintilla:
The wine has lively bubbles, forming a crown with light columns. Deep garnet in color, it displays good legs in the glass. The nose is clean and intense, with notes of gummy candy, licorice, candied fruit, and hints of pastry. On the palate, it is dry, with high acidity and a touch of greenness typical of young wines, yet elegant. It presents balsamic nuances, hints of eucalyptus, and slightly astringent tannins that do not overwhelm the palate.

Conservación y servicio
Guárdalo en un sitio fresco y oscuro, sin cambios bruscos de temperatura. Las botellas con corcho, tumbadas; los frizzantes con chapa, de pie.
Es un vino sin filtrar: puede traer algún poso natural. Si quieres evitarlo, deja la botella de pie unas horas antes de servir.
Una vez abierto, en la nevera aguanta unos 3 días; los frizzantes, 1-2 días con un tapón para espumosos.

Muy satisfecho con la compra del vino frizzante de Bodegas Campestral. El envío llegó puntualmente y en perfectas condiciones, con un embalaje cuidado y todo tal como esperaba.
En cuanto al vino, ha sido todo un descubrimiento: **fresco, agradable, muy fácil de beber y con un punto frizzante que lo hace realmente especial**. Una auténtica maravilla para disfrutar bien frío y compartir en buena compañía.
Sin duda, una experiencia muy positiva tanto por la calidad del producto como por el servicio. Repetiré seguro.
El envío a sido muy lento, el producto es muy bueno siendo un punto de aguja importante al menos en el blanco.

He pedido información sobre los vinos que tengo un maridaje dedicado a este tipo de vino que me parece muy interesante y más sin pertenecer a ninguna denominación, la reacción ha sido nula además he invitado a la misma y no veo interés, así desde luego no das a conocer ni valorar vuestro vino, tan importante es la Pre-Venta como la Post-Venta
