NAME: Ancestral White

WHAT DO YOU SEE?
Pale lemon green color with medium intensity, with clear greenish yellow reflections, clean and clear.
WHAT DO YOU SMELL?
A clean nose with no flaws, ripe fruit, spices, orange blossom, primary and youthful nuances coming from the fruit.
WHAT DOES IT TASTE LIKE?
Medium acidity, very balanced, non-invasive and not at all aggressive bubbles, slight bitter notes with a not very long finish in the mouth.
WHAT TO COMBINE IT WITH?
Desserts, fresh, sour dishes, dark chocolate. Fresh cheese, smoked fish.

Clean wine, not cloudy, bright, pale lemon color with greenish and golden reflections.
WHAT DO YOU SMELL?
Clean nose, without defects, a striking intensity, citrus, tropical nuances, lemon, lime, pineapple, ripe pineapple, ripe banana, preserving all the primary nuances.
WHAT DOES IT TASTE LIKE?
It has a smooth entry into the mouth, a medium-high acidity that makes us salivate, fleshy, slightly oily in the mouth, an acidity that reminds us of cooked, roasted apple, with a medium body and a very light finish in the mouth.
WHAT TO COMBINE IT WITH? Seafood: it can go very well with products with alkaline flavours such as oysters. Vegetables, raw or cooked. As with the ancestral wine, it could also go well with desserts, fresh and acidic dishes, dark chocolate, fresh cheese and smoked fish.

WHAT DO YOU SEE?
A clean, transparent, clear wine, without defects in the glass. Yellow-green, with golden reflections and an intense colour. You can see the fat, unctuousness and traces of the wine in the glass (the “legs”).
WHAT DO YOU SMELL?
Nuances of a veil of flowers, bakery, pastries, yeast and a high intensity without being pronounced that is not bothersome.
WHAT DOES IT TASTE LIKE?
Dry wine, medium acidity, has a body that turns into fat, without being annoying. The warmth of the alcohol is noticeable, and when you let it breathe, nuances of toffee begin to appear.
WHAT TO COMBINE IT WITH?
White meat, meat stews with vegetables. Nuts, smoked cheeses, grilled fish. Candied almonds, foie and seafood.

Bubbles with slight movement, salmon-orange partridge-eye colour, reminiscent of wines made using the bleeding method.
WHAT DO YOU SMELL?
Countryside, earth, mineral, nature and a lot of expression.
WHAT DOES IT TASTE LIKE?
Dry wine, with a well-balanced low acidity, the alcohol is noticeable, it leaves more “legs”, more fat in the mouth. It has a light entrance, a very balanced mid-palate, with a slightly long finish where you can notice the acidity with a little astringency that is not bothersome.
WHAT TO COMBINE IT WITH?
Popcorn, pickles, sweet and sour dishes or sauces.
NAME: Unfiltered Claret

WHAT DO YOU SEE?
The wine looks clean in the glass, with a medium intensity, ruby, garnet color, some tile reflections, very interesting for a claret.
WHAT DO YOU SMELL? The primary part of red and black fruit is noticeable, with liquor-like nuances like cherries, and with the passage of time in the glass, creamy, dairy-like nuances appear.
WHAT DOES IT TASTE LIKE?
It is a dry wine, with a noticeable maturity in the mouth, which simulates sweetness, it has a medium acidity, very well balanced alcohol. A very smooth wine, both for its subtle entry and its elegant exit in the mouth.
WHAT TO COMBINE IT WITH?
White meats, stewed and cooked. Blue and fatty fish. Spiced bread doughs, oregano with flavours such as capers. Smoked, fresh and aged cheeses.

WHAT DO YOU SEE?
More lively bubbles without being aggressive, which form the crown and create very faint columns in the glass, with a deep intense garnet color, presenting a good tear in the glass.
WHAT DO YOU SMELL?
Clean, flawless nose, intense, with sweet nuances, jelly beans, liquorice, candied fruit, and many nuances of pastries and cakes.
WHAT DOES IT TASTE LIKE?
It has a dry mouthfeel, high acidity, and retains the greenness of young wines, but is very elegant. It maintains good acidity from the elegant entry into the mouth to its very well-balanced exit. Balsamic nuances appear, with hints of eucalyptus, and the tannins are slightly astringent without saturating the palate.

Pure chocolate, game meat, stewed game, wild boar and venison, fig jam, roasted fruit such as pear or apple.

Garnet color with tile highlights, with a medium-deep intensity.

Not at all aggressive on the nose, the barrel covers the young part, secondary flavours, it preserves the fruit but notes of evolution of the wood appear such as vanilla, chocolate or toasted bread.
WHAT DOES IT TASTE LIKE?
It is a dry wine, with medium acidity, very well-balanced tannins, silky, full-bodied without being heavy, warm, robust, with an intense entry. As you taste it, it gains body, with a very smooth and elegant finish.
WHAT TO COMBINE IT WITH?
Mushroom risotto, buttered toast. Smoked and grilled meats. Grilled lettuce hearts.

Dry wine, striking entry, elegant, silky, maintaining red and black fruit, with young greenish nuances, intense flavor without being heavy, with a very balanced tannin. The jelly and riper or cooked fruit appear again.
WHAT TO COMBINE IT WITH?
Dried fish, fried and salted almonds, nuts such as cashews and dried fruit such as raisins. Mojama, cured meat, ham, smoked and salted meats.
